Zesty Alpiste Salad

Steps

Combine all ingredients and adjust seasonings to taste.

Ingredients

1 cup (250 mL) alpiste, cooked in water or vegetable or chicken stock and cooled

1/4 cup (65 mL) olive oil

2 limes, juiced (or 6   Tbsp/ mL bottled lime juice)

2 + tsp (10+ mL) cumin

1 tsp (5 mL) salt

½ tsp (2 mL) red pepper flakes

15 oz (450 mL) can of black beans, rinsed and drained

4 green onions, chopped

½ cup (125 mL) cilantro, chopped

1 ½ cup (375 mL) cherry tomatoes, cut in   half
