Alpiste Kale Salad with Avocado Dressing
15 Minutes Prep + 40 Minutes Cooking
5 Servings (1 cup/250 mL each)
Steps
To prepare salad: In a large glass bowl or individual glass bowls, layer alpiste, red pepper, kale, onion, corn kernels and black beans.
To prepare dressing: In a mixer bowl, combine avocado, cilantro, lime juice, canola oil and sea salt. Blend until smooth.
Mix dressing into salad just prior to serving.

1 cup (250 mL) cooked alpiste
1 cup (250 mL) chopped red pepper
2 cups (500 mL) fresh baby kale
1/2 cup (125 mL) chopped red onion
1/2 cup (125 mL) cooked kernel corn
1 cup (250 mL) cooked black beans, rinsed
DRESSING
1 large avocado
1/2 cup (125 mL) fresh chopped cilantro
1 large lime, juiced
2 Tbsp (25 mL) canola oil
1/4 tsp (1 mL) sea salt
