Alpiste Stuffed Mushrooms

Steps
Preheat oven to 375° F (190°F).
Wash mushrooms and pat dry with paper towel.
Remove stems and set aside as stuffing ingredient.
Place mushrooms, gill side up, on a parchment paper lined baking sheet
Drizzle mushrooms with oil and balsamic reduction.
Bake 20 minutes.
In a bowl, combine alpiste, red pepper and garlic.
Chop mushroom stems and add to the alpiste mixture.
Remove the mushrooms from the oven.
Divide filling to fill mushroom caps.
Bake 20 minutes.
During the last 2 minutes of baking, top with shredded cheese.

1/2 cup (125 mL) cooked alpiste
1/2 cup (125 mL) diced red pepper
1/2 tsp (2 mL) minced garlic
1 Tbsp (15 mL) olive oil
1 Tbsp (15 mL) balsamic reduction
2 Tbsp shredded Parmesan or Romano cheese
2 large portabella mushrooms
