Alpiste Stuffed Mushrooms

15 Minutes Prep + 40 Minutes Cooking

Steps

  • Preheat oven to 375° F (190°F).

  • Wash mushrooms and pat dry with paper towel.

  • Remove stems and set aside as stuffing ingredient.

  • Place mushrooms, gill side up, on a parchment paper lined baking sheet

  • Drizzle mushrooms with oil and balsamic reduction.

  • Bake 20 minutes.

  • In a bowl, combine alpiste, red pepper and garlic.

  • Chop mushroom stems and add to the alpiste mixture.

  • Remove the mushrooms from the oven.

  • Divide filling to fill mushroom caps.

  • Bake 20 minutes.

  • During the last 2 minutes of baking, top with shredded cheese.

Ingredients

  • 1/2 cup (125 mL) cooked alpiste

  • 1/2 cup (125 mL) diced red pepper

  • 1/2 tsp (2 mL) minced garlic

  • 1 Tbsp (15 mL) olive oil

  • 1 Tbsp (15 mL) balsamic reduction

  • 2 Tbsp shredded Parmesan or Romano cheese

  • 2 large portabella mushrooms
